Allspice is the dried berry of an evergreen tree indigenous to the Caribbean and Central America. We hand-pick the whole allspice to ensure that they have peppery, sweet flavor. Use allspice in pickling liquids for cucumbers, beets, onions or green beans. It’s also great for seasoning the brines for larger cuts of meat like pork roasts and whole chickens. The whole berries add depth of flavor to slow-cooked corned beef and cabbage, pot roasts and stews. None of my grocery stores now carry this small size of whole allspice. I use it constantly for pickled, sweet canned peaches and pears served as condiment to chicken, pork and even beef. Yes, I could buy the big bottle but I like small because it stays fresh longer. When I think I need a replacement jar, I vacuum up into my vacuum bag the remainder in the jar so the vacuum exhaust smells delightful. Used to the very last berry.
